BANANA NUT BREAD 1/2 C oil 1 C brown sugar 1 t vanilla 3 medium sized ripe bananas (mashed) 2 eggs (beaten) 1 1/2 C whole wheat flour 1/2 C wheat germ or flax seed 2 t baking powder 1/2 t salt 2 t cinnamon 1/2 C chopped nuts (pecans of walnuts) Preheat oven to 325 Mix oil and sugar Stir in mashed bananas, vanilla, and beated eggs Gently mix in the dry ingredients and nuts (do not over mix) Pour batter into greased and floured loaf pan Bake for 1 hour and 10 minutes or until toothpick comesout clean Cook's note: 1) Banana bread is best when made from over ripe bananas, so feel free to use bruised or otherwise undesirable bananas in this recipe. Likewise, it is okay and encouraged to add 1 or 2 more bananas. This will make the bread moister. 2) Bread is beast when refridgerated overnight before serving.
