CORN AND BLACK BEAN SALSA CRUDA 60 oz. (~4 cans) whole black beans 1 bag frozen corn (thawed) 1 bunch cilantro (chopped) 6 large tomatoes (diced) 2 onions (diced) 4 avocados (diced) 3 fresh serrano peppers (de-seeded and minced) 1/2 C lime juice Salt/Pepper to taste (you can also add Cajun seasoning) Mix all ingredients and serve cold with your favorite southwest or mexican main dish (example: King Ranch Chicken or Enfrijoladas)
