la torta verde 6 cups peas (frozen) 8 pounds potatoes 2 pounds spinach 16 eggs, well beaten 5 cups Parmesan cheese salt black pepper 2 cups whole wheat bread crumbs 1 pound mozzarella cheese 8 tablespoon butter boil peas 15 - 30 minutes , till tender puree in blender peel potatoes, boil for 20 min, till tender force thru food mill/potato ricer wash spinach, cook in saucepan 5 min, drain, squeeze dry and chop combine pea, potato and spinach and eggs one at a time stir in parmesan cheese, salt, pepper and blend oil bottom, sides of large swallow baking dish and sprinkle with half of bread crumbs dump out crumbs pour in half mixture, cover with mozzarella cheese pour rest of mixture sprinkle with rest of bread dot with butter bake in preheated over at 350 F for 40-45 min or til puffed and top is golden serves ~20
